The Xinomavraw Oenops Wines is a natural red wine made from 100% Xinomavro, created to show the more raw, vibrant and authentic side of the variety. The grapes come from old vineyards of 45-80 years in Naoussa, Amyntaio and Rapsani, three areas of Northern Greece where Xinomavro finds freshness, tension and that distinctive combination of fruit, acidity and earthy complexity.
In the winemaking process, Oenops Wines follows a very clean, low-intervention approach. The grapes are gently crushed by hand, a small percentage remains whole-bunch for extra complexity and fermentation takes place spontaneously in clay amphorae and concrete tanks. Extraction is restrained, without excess, while the wine ages for around 6 months in amphorae and large old barrels, keeping the freshness and fine structure of Xinomavro without being covered by oak.
In the glass, it has a bright ruby colour and aromas of sour cherry, pomegranate, strawberry, dried tomato, herbs and subtle spices. On the palate, it is juicy, energetic and very expressive, with vibrant acidity, fine tannins and a more earthy, natural feel that makes it stand out from more classic Xinomavro wines. It does not try to be heavy or forced; it has tension, character and a beautiful directness that makes it enjoyable from the first sip.
It is a wine that loves food. It pairs well with lamb, pork, duck, tomato-based stews, mushrooms, Greek vegetable dishes, tomato-based plates, spicy Mediterranean flavours and semi-hard cheeses. Try it slightly chilled, especially if you want to highlight its freshness and red fruit character.
