Wanderlust Rosé Chatzivaritis Estate

Wanderlust Rosé by Chatzivaritis Estate is a Xinomavro rosé that does not play the role of a simple summer wine. It has freshness, fruit and intensity, but also a more gastronomic side that makes it feel completely at home on the table, not just as an aperitif.
It comes from an organic vineyard in Goumenissa, on the Slopes of Paiko, an area where Xinomavro takes on a cooler, more aromatic and energetic expression. Chatzivaritis Estate works with low intervention and lets the variety speak more clearly, without excess or unnecessary polish.
In the winemaking process, the juice stays with the skins for about 2 hours, just enough to gain its delicate rosé-orange colour and a little extra structure. Fermentation happens spontaneously, with no additives, fining or filtration, while 6 months on the lees in tank give it a fuller texture and more depth.
In the glass, it has a light colour with orange hints and a subtle haze, typical of its natural approach. Aromatically, it shows small red fruits, cherry, strawberry and a touch of tomato, beautifully echoing the identity of Xinomavro. On the palate, it is full, aromatic and refreshing, with crisp acidity and a long finish.
It is a rosé for anyone looking for something more substantial, more alive and more food-friendly. It works beautifully with pizza, sushi, ramen, Thai dishes, stuffed vegetables, roasted chicken, Mediterranean salads and dishes with tomato or mild spices.
