Goumenissa Wild Ferment Chatzivaritis Estate

Goumenissa Wild Ferment by Chatzivaritis Estate is the freer, rawer and more deeply expressive version of the estate’s Goumenissa. It is built on the region’s classic duo, Xinomavro and Negoska, but lets spontaneous fermentation set the tone, without unnecessary intervention or excessive polishing of the wine’s character.
The grapes are harvested and selected by hand, while the two varieties are spontaneously co-fermented in stainless steel tanks. The must stays with the skins for around 3 weeks, gaining intensity, colour, structure and that earthy, more direct feel that makes naturally made wines so interesting. The wine then ages for 12 months in old oak barrels and remains for 2 years in bottle before release, gaining depth without losing its energy.
In the glass, it shows ripe red fruit, cherry, tomato, olive, herbs, spices and a subtle balsamic note. Xinomavro brings energy, acidity and savoury intensity, while Negoska adds softer texture and fruit. The result is a red wine with personality, structured but not aggressive tannins, beautiful concentration and a finish that lingers.
Chatzivaritis Estate in Goumenissa has linked its identity with local varieties and low-intervention winemaking. Here, the region comes through in a rawer, more honest and more gastronomic way. Open it with red or white meats, grilled dishes, slow-cooked recipes with sauces, pasta, yellow cheeses or dishes with mushrooms and Mediterranean herbs. Best served at 16-18°C.
