Minimus Mus by Chatzivaritis Estate is a natural red Xinomavro that shows the more direct, raw and lively side of the variety. It has the intensity and structure you expect from Xinomavro, but here the result feels freer, earthier and more expressive, without unnecessary intervention or excessive polish.
It comes from an organically and biodynamically cultivated vineyard in Filyria, within the wine-growing area of Goumenissa, on the Slopes of Paiko. The natural winemaking approach of Chatzivaritis Estate lets the grape and the place come through clearly, creating a red wine with character, energy and a strong sense of authenticity.
In the winemaking process, the grapes are carefully selected, the berries are gently crushed and fermentation happens spontaneously in stainless steel tanks. The wine is bottled without fining or filtration, while sulfur is kept at a very low level and added only before bottling. Ageing for 4 months in old French oak barrels and 1 year in bottle give the wine more balance and depth, without taking away its freshness.
In the glass, it has a red colour with purple highlights and a slight haze, typical of its natural approach. Aromatically, it shows small red fruits, cherry, gooseberry, liquorice and a touch of tomato. On the palate, it is full and structured, with crisp acidity, firm tannins and a long finish that keeps the fruit and earthy intensity of Xinomavro in focus.
It is a wine for anyone looking for a red with personality rather than something predictable. Open it with fatty fish such as salmon or tuna, lean red meat, lamb, pork, mushrooms, tomato-based stews or a juicy burger. Ideally, give it a little time in the glass or in a decanter so it can open up properly.
