Valos by Katsaros Estate is a Xinomavro from Krania, Mount Olympus, showing the variety in a more elegant, clean and immediately enjoyable expression. It has the energy and herbal character of Xinomavro, but without becoming strict or difficult.
Fermentation takes place in stainless steel tanks, preserving freshness and clarity of fruit, while ageing in French oak barrels for approximately 9–10 months adds structure, depth and a subtle touch of vanilla and spice.
In the glass, it brings strawberry, cherry, sour cherry, sun-dried tomato, lavender, rosemary, olive leaves and a gentle oak note. On the palate, it is medium-bodied, juicy and balanced, with fresh acidity, fine tannins and a long, fruity finish.
It pairs very well with braised beef in tomato sauce, soutzoukakia, country sausage, mushrooms, duck, tomato-based dishes and mature cheeses. It is a Xinomavro with character, but also with ease in the glass — ideal for anyone looking for something Greek, gastronomic and not overly heavy.
