Roza Retsina by Kechris Winery is a rosé retsina that completely breaks away from expectations. It is made from Xinomavro in Goumenissa and shows a bolder, more gastronomic and contemporary side of retsina.
Vinification takes place with extended maceration and fermentation in oak barrels in the presence of fresh pine resin. The wine then remains for approximately 6 months on the fine lees, gaining texture, depth and a more complex character, without losing its freshness.
In the glass, it has a deep rosé colour with violet highlights. It brings wild strawberry, mastic, herbs, fresh resin notes and a subtly smoky background from the oak. On the palate, it is lively, spicy and balanced, with the acidity of Xinomavro keeping the wine fresh and the finish long.
It pairs very well with grilled mushrooms, seafood, smoked salmon, fish in red sauce, lamb casserole, Greek meatballs, grilled eggplant, piquant hard cheeses and Asian flavours such as salmon sushi or vegetable tempura. This is retsina for anyone looking for something Greek, distinctive and genuinely different.
