Santo asyrtiko sparkling Brut is a dry sparkling white wine made from 100% Assyrtiko from the Santorini vineyard, combining freshness with elegant and highly enjoyable bubbles. In the glass, it shows a crystal-clear lemon color with green hues, while its mousse is fine yet persistent. On the nose, aromas of white-fleshed stone fruits, green fruits, and subtle dough notes stand out, giving it freshness and expressiveness. On the palate, it is round and balanced, with refreshing acidity and a long mineral finish that keeps its character vibrant. Its ageing on the lees in bottle for at least 14 months adds extra complexity and a more refined profile. It pairs beautifully with seafood, light appetizers, sushi, and more delicate dishes.
