Santorini Irini by Santo Wines is a dry white wine made from 100% Assyrtiko, with a deep, mature, and highly complex character. It is a more evolved and gastronomic expression of Santorini, combining the strict minerality of the variety with greater volume and complexity. The 2022 vintage is aged for 18 months in Vinsanto barrels, adding depth, roundness, and a more layered aromatic profile. On the nose, aromas of ripe citrus, stone fruits, nuts, honey, and subtle notes of spice and oak stand out. On the palate, it is full-bodied, rich, and very well balanced, with lively acidity that keeps the wine fresh and persistent. It pairs beautifully with oily fish, seafood, white meats, and dishes with richer white sauces.
