Santorini Nykteri by Santo Wines is a barrel-aged dry white wine that combines the traditional style of Nykteri with richness, intensity, and a gastronomic profile. It is made from 85% Assyrtiko, 10% Athiri, and 5% Aidani, beautifully expressing the concentration and ripeness of the Santorini vineyard. In the glass, it shows a medium-intensity lemon-yellow color, while the nose reveals aromas of jasmine, night-blooming flowers, lemon, green apple, pear, and subtle vanilla notes. On the palate, it is dry, full-bodied, and balanced, with crisp acidity that keeps the fruit and floral notes lively, while a gentle touch of oak enhances harmony. The 2023 vintage is aged for 6 months in French oak vats and pairs beautifully with oily fish, seafood, white meats, and dishes with richer white sauces.
