Akakies Sparkling Kir-Yianni Domaine

Akakies Sparkling by Kir-Yianni Estate is a sparkling rosé wine that shows the brighter, fruitier and fresher side of Xinomavro. It comes from Amyndeon, one of the coolest winegrowing zones in Greece, where the lakes, altitude and cool nights help the variety keep intensity, acidity and clean fruit expression.
In the glass, it has a bright rose color and lively bubbles that immediately bring a sense of freshness. The nose is clearly fruity, with wild strawberry, white-fleshed cherry and the characteristic hint of tomato that gently points back to the identity of Xinomavro. On the palate, it is rich, refreshing and pleasantly playful, with acidity balancing the soft sense of sweetness and keeping the finish vibrant.
The winemaking is designed to keep the wine aromatic and direct, without losing its detail. The grapes are harvested earlier than those intended for still rosé and red wines, in order to preserve high natural acidity and freshness. After the first fermentation in stainless steel tanks, the wine remains for a short period with the light lees and then moves into closed tanks for the second fermentation, where it gains its bubbles.
Akakies Sparkling is the kind of wine you open without needing a big occasion, but it ends up making the moment feel a little more special.
