Agathoto by Kir-Yianni Estate is a Xinomavro rosé that leans more into the gastronomic side of rosé and less into the simple summer-drinking style. It comes from Gastra, one of the most distinctive sub-regions of Naoussa, from a small vineyard that gives the wine intensity, character and a clearer sense of place.
In the glass, it has a pale salmon color with subtle orange highlights. The nose is full of red fruit, mainly cherry and strawberry, along with notes of vanilla, oak and a more earthy, herbal feel that recalls Xinomavro without shouting it. On the palate, it is rich, full and refreshing, with vivid acidity that keeps everything balanced and a long finish that leaves fruit, texture and a delicate touch of wood.
The winemaking of Agathoto is one of the things that makes it stand out. Part of the grapes is destemmed and goes through strict berry-by-berry sorting, while another part is pressed as whole bunches. This is followed by two days of cold maceration, fermentation in French oak barrels and oval tanks, and then 8 months of ageing in wooden tonneaux. This gives the wine volume, complexity and a more serious structure, without taking away its freshness.
Agathoto is a rosé for the table. It does not stay only on fruit; it has energy, depth and the slightly wild charm of Xinomavro from Naoussa. It pairs beautifully with Mediterranean cuisine, cold cuts, grilled vegetables, chicken in red sauce, pizza, tomato-based pasta, mushroom dishes and richer appetizers.
