Santorini Vassaltis Vineyards

Vassaltis Santorini 2019 is a dry white wine made from 100% Assyrtiko, expressing the authentic volcanic character of Santorini with intensity and clarity. On the nose, aromas of tropical fruit, honeysuckle, sea spray, and mineral notes reminiscent of basalt and pumice stand out, giving it a distinctive identity. On the palate, it is dry, vibrant, and very well structured, with high acidity, pronounced minerality, and a saline edge that bring tension and long persistence. The wine rests on its fine lees for seven months, adding volume and greater complexity without losing its freshness. It pairs ideally with fish, shellfish, seafood, white meats, and dishes with lemon-based sauces.
