Vassaltis Santorini 1.5L 2024 is a dry white wine made from 100% Assyrtiko, expressing the authentic character of Santorini with clarity and intensity. On the nose, aromas of flint, wet stone, sea iodine, ripe yellow fruit, peach, and honey stand out, giving it depth and complexity. On the palate, it is dry, full-bodied, and very well structured, with crisp acidity, pronounced minerality, and a long, clean finish. Its 7 months on the lees enhance volume and gastronomic depth without taking away its freshness. It pairs ideally with fish, shellfish, seafood, white meats, and dishes with lemon-based sauces.
