Vassaltis Santorini 2021 is a dry white wine made from 100% Assyrtiko, expressing the authentic volcanic character of Santorini with intensity. On the nose, aromas of dried lemon, lime pith, white pear, grapefruit, and subtle mineral notes reminiscent of wet stone and flint stand out, while riper hints of honey and peach also emerge. On the palate, it is dry, vibrant, and very well structured, with crisp acidity, pronounced minerality, and a long, clean finish that leaves a characteristic saline impression.
