Ovilos Red by Biblia Chora Estate is a Cabernet Sauvignon with depth, intensity and a clear long-ageing character. It comes from the estate’s first vineyard at the foothills of Pangaio and has that serious, dark energy that does not need to shout in order to stand out. It is a red wine for a large glass, time and tables that call for something truly powerful.
In the glass it has a deep black-red colour and reveals ripe black fruit, cassis, black cherry, blackberry jam, violet, cedar, tobacco leaf and sweet notes of chocolate. Long maceration and ageing in new French oak barrels give it firm structure, density and complex texture, while additional time in the bottle helps it integrate and gain even more finesse.
On the palate it is dry, rich and strictly elegant, with intense yet well-crafted tannins, vibrant acidity and a long finish that leaves black fruit, chocolate, spices and cedar. Open it with beef rib steak, game, slow-cooked lamb, fillet with mushrooms, dishes with truffle or aged hard cheeses. A Cabernet Sauvignon with prestige, power and serious cellaring potential.
