Nebbio by Wine Art Estate is one of the estate’s most distinctive red wines and a rare Greek expression of Nebbiolo. The variety, famous for the great wines of Piemonte, is considered difficult and demanding away from its homeland, yet in Drama it finds an unexpectedly fitting rhythm. The estate produces it every year in very limited bottles, creating a wine with finesse, power and a truly distinctive personality.
Vinification starts with a few days of pre-fermentation cold maceration, allowing the noble phenolics and structure of the grape to pass into the must before alcohol appears. Fermentation takes place in stainless steel tanks with regular pump-overs for better extraction of colour and tannins. After malolactic conversion, the wine is transferred to old, neutral 225-litre French oak barrels, where it remains for 4.5 years before being bottled with light filtration.
In the glass, it has a pale garnet colour, as often happens with Nebbiolo, but do not let its transparency fool you. The nose is mature, complex and constantly evolving, with aromas of dried plums, smoke, soy, cigar box and savoury notes reminiscent of pastourma. On the palate, ageing has softened its edges, giving it a velvety texture, while the bright acidity keeps the wine lively and full of energy.
It is a red wine for slower moments, not necessarily one to open in a hurry. It needs a large glass, a little time and food with depth. Try it with mushroom risotto, beef Wellington, wild boar fillet, truffle dishes, game, slow-cooked beef or a burger stuffed with blue cheese. It is a wine with detail, aged character and flavour intensity that lingers.
