Mystirio by Artemis Karamolegos Winery is an Assyrtiko that steps a little outside the ordinary and shows a bolder, almost handcrafted side of Santorini. It is made from 100% Assyrtiko from a unique vineyard site in Pyrgos, with century-old vines over 150 years old, giving the wine impressive intensity, structure and a clear volcanic imprint.
Its great distinctive feature is skin contact, a vinification approach closer to the logic of red wines, with spontaneous fermentation, natural yeasts and minimal intervention. Ageing on the lees for 12 months gives it volume, texture and depth, while in the glass it reveals peach, pear, bergamot, chamomile, tea, herbs, spices and intense minerality.
On the palate it is full-bodied, complex and gastronomic, with the acidity of Assyrtiko keeping the wine vibrant and the fine tannins from the maceration giving it character. It calls for food with attitude: fish soup, sweet-and-sour dishes, white meats, spicy flavours, dishes with spices or even more creative seafood pairings.
