Spin by Chatzivaritis Estate is a natural red expression of Negoska that shows how interesting this local Goumenissa variety can become when handled with freedom and precision. It is not heavy just for the sake of impressing; it is juicy, spicy, structured and full of character.
It comes from organically and biodynamically cultivated vines in Filyria, within the wine-growing zone of Goumenissa. The most interesting part of the winemaking is the use of two different harvest dates: an early pick for freshness and energy, and a later one for depth, ripe fruit and concentration. The two harvests ferment spontaneously in stainless steel tanks, without additives, fining or filtration, with only minimal sulfur added before bottling.
The early harvest stays with the skins for 5 days, while the late harvest remains for 3 weeks. After fermentation, the wines age separately for 4 months in old French oak barrels and are then blended, creating a red wine that balances freshness with intensity.
In the glass, it has a deep red colour with violet highlights and a slight haze, in line with its natural approach. Aromatically, it shows black cherry, small red fruits, liquorice, vanilla, spices and green pepper. On the palate, it is full-bodied and structured, with good tannins, balanced acidity and a long finish that keeps a lovely spicy tension.
It is a red wine for anyone looking for something more authentic, more alive and less predictable. Open it with beef, duck, grilled tuna, mushrooms, dishes with red sauces, charcuterie or a rich cheese platter. It works beautifully slightly chilled, around 16°C, to keep its freshness and fruit in focus.
