Dianthos Boutari Winery

€14,40

Boutari Wineries’ Dianthos is a dry rosé wine made from Xinomavro, with origin in Imathia and a clear connection to Naoussa. It is a rosé that does not rely on an easy, sweet-drinking style; it has freshness, fruit, energy and that subtle gastronomic side that makes Xinomavro so interesting even in rosé form.

The grapes are selected from different sub-areas of Naoussa and are harvested separately, depending on their level of ripeness. In the winemaking process, part of the Xinomavro is vinified using the saignée method, after a precisely controlled period of skin contact, while the rest spends a very short time in the pneumatic press. This gives the wine its pale rosé colour, clean aromatic profile and freshness, without making it heavy with pronounced tannins.

In the glass, it appears with a light rosé colour and aromas of ripe strawberry, small red fruits and more exotic hints, such as lychee. On the palate, it is lively, with crisp acidity, balanced body and a fruity finish that lingers beautifully. It has the extroversion you want from a rosé, but also enough structure to stand confidently at the table.

Naoussa is deeply connected with Xinomavro, and Boutari Wineries have played an important role in highlighting this variety over time. In Dianthos, this experience comes through in a lighter, more contemporary expression: a rosé with purity, intensity and character, ideal for Asian cuisine, shrimps, shellfish, pasta, pizza, turkey or vegetables. Best served at 12-14°C.
