1879 Legacy Boutari Winery

€34,60

Boutari Wineries’ 1879 Boutari Legacy is a dry red wine made from Xinomavro, produced in the PDO Naoussa zone. Its name goes back to 1879, the year Boutari’s story began, but the wine does not stay stuck in the past. It is a modern, dense and carefully crafted expression of Xinomavro, with depth, power and a clear sense of place.

The grapes come from a selected vineyard plot in Trilofos, Naoussa, an area that gives Xinomavro intensity, acidity and structure. In the winemaking process, 24 hours of cold maceration help bring out cleaner fruit and colour, while controlled fermentation at 20-27°C keeps the variety in balance. Gentle extraction, pump-overs before the start of fermentation and partial removal of the seeds help shape the tannins without harshness or bitterness. Malolactic fermentation follows, along with 24 months of ageing in third-use French oak barrels.

In the glass, it has a deep red colour and intense complexity. Red berries, dried fig and tomato juice show the classic, earthy side of Xinomavro, while ageing adds vanilla, roasted almond, plum and subtle cigar notes. On the palate, it is full-bodied, with pleasant acidity, velvety tannins and a rich feel that spreads beautifully.

It is a wine for moments when you want something more special, without falling into unnecessary seriousness. It opens up with time in the glass and gradually shows its fruit, spices, earthy character and mature texture. It stands beautifully next to red meat, game, rich pasta dishes, cheese platters, as well as chocolate soufflé for a bolder pairing. Best served at 16-18°C.
