Cuvée Evdemon Estate Argyros

Cuvée Evdemon by Estate Argyros is Assyrtiko in full premium mode. It comes from very old vines in Pyrgos, Santorini, and brings to the glass all the power of the island: concentration, salinity, minerality and that sharp energy that makes great Santorini whites so distinctive.

Vinification gives it depth without covering the character of Assyrtiko. Part of it ages in French oak barrels, while the rest stays for a long period on the lees, gaining volume, structure and a more complex texture. In the glass it reveals lemon, grapefruit, lime, peach, citron, almond, toast, smoke and flint.

On the palate it is rich, strict and electric, with high acidity, salty intensity and enormous length. It needs a large glass, a little time to open up and food with personality: lobster, shellfish, grilled fish, barbecued seafood, white meats with lemon-based sauces or smoked cheeses. A wine for cellaring, large gatherings and moments that call for something truly powerful.
