Cava Dryos Red Hatzimichalis Estate
€22,40
Cava Dryos Red by Domaine Hatzimichalis is a red wine with ripe fruit, structure and a classic aged feel. It belongs to the Cava category, which means a total maturation of three years, with substantial time both in barrel and in bottle.
It comes from selected sub-mountainous privately owned vineyard sites of Domaine Hatzimichalis in Atalanti Valley, in the Ai-Giorgis area, on the southern outskirts of Mount Knimis. Vinification follows the classic red winemaking method and the wine ages for 18 months in 228L French oak barrels, before staying for at least 18 months in the bottle. This gives it a more integrated texture, spicy depth and the balance expected from a Cava wine.
In the glass, it brings red and black forest fruit, plum, dried fruit, black raisin, clove, cinnamon, coffee and notes of leather. On the palate, it is rich, balanced and full-bodied, with gentle tannins, intense flavour and a long fruity finish.
It pairs very well with tagliata, rib-eye steak, fillet of beef with mushrooms, shank, roast duck, pasta with meat, cured meats and semi-hard cheese platters. It is a red wine for the table, BBQ, friends and more gastronomic moments, with ageing but without becoming heavy or difficult.
