Yataki by Domaine Hatzimichalis is a Merlot from Atalanti Valley, with ripe fruit, soft tannins and a more velvety mood in the glass. It comes from the single vineyard Yataki, a sub-mountainous vineyard site on the foothills of Mount Knimis, within the privately owned vineyard of the estate.
Vinification follows the classic red winemaking method under controlled temperature and the wine ages for 12 months in 228L French oak barriques, in the estate’s underground cellars. The oak gives it depth, spicy notes and a more integrated texture, without losing the juicy character of Merlot.
In the glass, it brings black cherry, blueberry, blackberry, ripe black fruit, sweet spices, vanilla, wet wood and subtle herbal notes. On the palate, it is medium to full-bodied, rounded and balanced, with soft tannins, a chocolate feel and a long finish.
It pairs very well with stews, grilled red meats, lamb, shank, roasted pork, duck with a light sauce, beef bourguignon, rabbit ragu, mushrooms and mature cheeses. It is a Merlot with an easy yet well-crafted character, ideal for the table, gatherings and more comforting flavours.
