Kapnias Zygos Red by Domaine Hatzimichalis is a Cabernet Sauvignon from Atalanti Valley, with a deep, smoky and strongly structured character. It comes from the selected Zygos vineyard, at an altitude of 350-400 metres, from old vines over 35 years old and very low yields.
Vinification follows the classic red winemaking method and the wine ages for 24 months in new 228L French oak barrels, before staying for at least 12 months in the bottle. This long ageing gives it depth, smoky complexity, firm structure and a more integrated feel on the palate.
In the glass, it brings ripe black fruit, blackcurrant, plum, black berries, fig, smoke, wet wood, violet, cedar and vanilla. On the palate, it is rich, complex and full-bodied, with high tannins balanced by dense fruit, intensity and a long finish. With ageing, it develops earthier notes, mushroom, tobacco and coffee.
It pairs very well with rib-eye steak, beef fillet, beef with mushroom sauce, roast lamb, grilled meats, game and semi-hard cheeses. It is a Cabernet Sauvignon for anyone looking for power, oak, smoke and serious ageing potential, without losing elegance.
