Bostani Rosé by Amoenos Vineyards is a rosé from Amyntaio built around two varieties with a clear personality: Xinomavro and Syrah. Xinomavro brings freshness, fine acidity and that elegant red-fruit side, while Syrah adds a little more volume, softness and aromatic depth. It comes from the Amyntaio winegrowing zone and is released as PGI Florina.
In the winemaking process, Syrah is pressed directly, while Xinomavro is destemmed and crushed before pressing. Fermentation takes place at low temperatures, the two varieties are blended after fermentation and the wine stays for 3 months on fine lees, with careful stirring. The result is a clean, fresh and balanced rosé, without becoming flat or one-dimensional.
In the glass, it has a salmon hue and aromas of red fruits, flowers and subtle herbal hints. On the palate, it is medium-bodied, with lively acidity and a finish that lingers nicely, leaving a cool, fruity impression. It is the kind of rosé that works easily on its own, but also has enough structure to stand next to seafood, salads, pizza, pasta with light sauces, oil-based vegetable dishes and Mediterranean recipes.
