Assyrtiko – Sauvignon Blanc by Domaine Hatzimichalis is a white wine that brings together two varieties with strong personality: Greek Assyrtiko and cosmopolitan Sauvignon Blanc. The result is fresh, aromatic and clean, with nice balance between citrus, herbal character and acidity.
The two varieties come from selected vineyard sites in Atalanti Valley and are vinified separately, so that each one keeps its own character. The wine does not go through oak at all, while fermentation takes place under controlled low temperature, keeping it fresh, direct and aromatic.
In the glass, it brings citrus, lemon zest, pear, greengage, quince, jasmine and subtle herbal notes. On the palate, it is light, fresh and pleasantly lively, with clean acidity, fruity character and a crisp finish.
It pairs very well with green salads, light fish meze, calamari, wild greens, seafood risotto, grilled or fried red mullet, sushi, chicken with lemon sauce and dishes with herbs. It is a white wine that drinks easily, but has enough energy to stand beautifully next to food.
