Alepotrypa by Domaine Hatzimichalis is an Assyrtiko from Atalanti Valley, with a clean, fresh and strongly mineral character. It comes from the selected Alepotrypa vineyard, a privately owned vineyard close to the sea, on soil that gives the wine a more saline and stony feel.
Vinification takes place under controlled low temperature, in order to preserve the acidity, freshness and purity of Assyrtiko. The result is a white wine with intensity, energy and structure, showing the variety in a more mainland yet very interesting expression.
In the glass, it brings lemon, citrus, passion fruit, jasmine, white flowers and distinctive minerality, with notes that recall wet sea pebbles. On the palate, it is fresh, lively and balanced, with a rich feel, high acidity and a refreshing finish.
It pairs very well with grilled fish, red mullet, marinated anchovies, shellfish, sea urchin salad, calamari, sea bass carpaccio, sushi, green salads with olive oil and lemon, and lemon chicken. It is an Assyrtiko for anyone looking for freshness, salinity and clean mineral intensity in the glass.
