Cava Dryos White Hatzimichalis Estate
€19,30
Cava Dryos White by Domaine Hatzimichalis is a white wine with a richer, riper and more gastronomic character. It is made from Assyrtiko, Malagousia and Chardonnay, three varieties that work together here to give freshness, aromatic expression, volume and a more complex feel in the glass.
It comes from selected sub-mountainous vineyard sites in the Ai-Giorgis area, in Atalanti Valley. Vinification follows a careful white winemaking method and the wine ages for 6 months in 228L Hungarian oak barriques, before staying for another 6 months in the bottle. This process gives it creamy texture, depth and a more integrated feel, without losing the acidity that keeps the whole wine lively.
In the glass, it brings glazed fruit, nuts, vanilla, subtle wood, peach, apricot, apple and sweet spices. On the palate, it is full-bodied, complex and balanced, with ripe white-fleshed fruit, a rich texture, good acidity and a long finish.
It pairs very well with lobster, paella, grilled oily fish, poultry with white sauce, pasta with light creamy sauces, smoked eel, risotto, mushrooms, nuts and semi-hard cheeses. It is a white wine for the table and food, with oak, intensity and complexity, but in a clean and balanced style.
