White Letter Boutari Winery
Boutari Wineries’ White Letter is a dry white wine from Macedonia, made from a blend of Assyrtiko, Sauvignon Blanc and Malagouzia. Three varieties with different personalities come together in the same glass, creating a bright, aromatic and refreshing wine without becoming loud or excessive.
In the winemaking process, the grapes are hand-picked and placed in cold rooms in order to preserve their more delicate aromatic elements. After light crushing, a small percentage of whole bunches remains in the process, while 12 hours of cold maceration and fermentation at very low temperature help the wine keep purity, intensity and freshness. Its short stay on the lees gives it a little extra body, without weighing down the final result.
In the glass, it has a bright, soft green-yellow colour and a fresh aromatic character with lemon, citrus fruit, peach and grapefruit. On the palate, it is lively, with crisp acidity, natural minerality, a full yet agile feel and a pleasant peppery note on the finish.
It is one of those white wines that opens easily, but does not disappear at the table. Assyrtiko brings energy and minerality, Sauvignon Blanc adds aromatic intensity, and Malagouzia contributes a more Mediterranean, fruity dimension. Best served at 8-10°C, it pairs beautifully with fish, seafood, grilled vegetables, green salads, cheese and fresh seasonal fruit.
