Thema White Magnum by Pavlidis Estate is the estate’s beloved white label in a 1.5L bottle, with a more impressive presence and a more collectible feel at the table. The wine is based on the classic Drama blend, Assyrtiko and Sauvignon Blanc, two varieties that work in great balance here: Assyrtiko gives energy, lemony intensity and minerality, while Sauvignon Blanc brings aromatic clarity, freshness and more expressive fruit.
In winemaking, cold skin contact, extended pressing and fermentation in stainless steel tanks are followed, in order to preserve the clean aromatic profile of the two varieties. The wine then remains for 3 months with the fine lees in stainless steel tanks, gaining a little more volume and texture, without losing its fresh, sharp side.
In the glass, it shows a green-yellow color and aromas of grapefruit, peach, exotic fruits, white-fleshed fruits and a subtle mineral note. On the palate it is refreshing, fruity and balanced, with clean acidity and a finish that lasts. The Magnum bottle makes it ideal for larger tables, gifting or cellaring, especially when you want a white wine that feels a little more special without becoming difficult. It pairs beautifully with seafood, fish, white meats, salads, pasta with white sauces and dishes with Mediterranean freshness.
