Emphasis Assyrtiko by Pavlidis Estate shows a more elegant and focused side of Assyrtiko, far from exaggeration. It comes from a selected vineyard plot on the slopes of Mount Menoikio, at an altitude of 550 meters, in an area of Drama that helps the wine keep freshness, intensity and a clean aromatic line.
In winemaking, gentle pressing is carried out with whole bunches, while fermentation takes place in small stainless steel and oak tanks. The wine then remains for 6 months with the fine lees, gaining more volume, texture and depth, without losing the variety’s characteristic acidity.
In the glass, it has a pale green-yellow color and aromas that move between white flowers, citrus fruits, lemon peel, peach and white-fleshed fruits. On the palate it is full, fresh and energetic, with mineral hints, clean fruit and a long aftertaste. It is an Assyrtiko that stands comfortably next to seafood, fish, risotto, Mediterranean salads and richer cheeses, while also offering very good ageing potential.
