Thema White by Pavlidis Estate is one of the most recognizable white wines of Drama, made from Assyrtiko and Sauvignon Blanc in a balanced coexistence. Assyrtiko gives energy, lemony intensity and minerality, while Sauvignon Blanc brings aromatic clarity, freshness and expressive fruit.
In winemaking, the wine keeps a clean, modern line: careful extraction, fermentation under controlled conditions and ageing for 3 months in stainless steel tank with the fine lees. This gives it a little more volume and texture, without losing its lively, fresh side.
In the glass, it shows citrus fruits, grapefruit, peach, white-fleshed fruits and a subtle herbal note, with the mineral element adding depth as it opens up. On the palate it is full yet sharp, with lovely acidity, clean fruit and a persistent lemony finish. It is the kind of white wine that easily matches seafood, fish, salads, white meats and dishes with fresher, Mediterranean flavors.
