Thema Red by Pavlidis Estate is one of the most characteristic red wines of Drama, made from a blend of 50% Agiorgitiko and 50% Syrah. The two varieties are cultivated on the slopes of Mount Menoikio, at an altitude of around 400 meters, in a microclimate that helps the wine keep ripe fruit, freshness and good structure.
In winemaking, Pavlidis Estate focuses on the right harvest timing and the duration of extraction, so that the fruit and tannins come through in balance. The wine ages for about one year in French oak barrels and then remains for another 6 months in the bottle, gaining a more complex character without losing the clarity of the fruit.
In the glass, it has a deep ruby color with purple highlights. The nose moves through small red fruits, ripe cherry, vanilla, toasted bread and subtle spices. On the palate it is full, smooth and well-integrated, with ripe tannins, pleasant freshness and a finish that recalls overripe fruits and cinnamon. It is a red wine that can be opened now, but also has very good ageing potential.
At the table, it needs dishes with intensity but not excess: beef, pork, red meat stews, grilled meats and medium-intensity hard cheeses. Best served at 16-18°C.
