Sole Vidiano by Biblia Chora Estate is a very interesting expression of Vidiano away from Crete, on the slopes of Pangaio. In fact, it is the first wine produced outside Crete from this Cretan variety, with a small contribution of Assyrtiko that gives it a little extra energy and a sharper sensation. Here, Biblia Chora Estate does something that suits it beautifully: it takes a Greek variety and works with it in a clean, modern way, without removing its character.
In the glass it has a bright greenish-yellow colour and reveals apricot, pear, citrus fruit and herbal hints. Vinification at low temperature in stainless steel tanks keeps the fruit pure and bright, while ageing on the fine lees for 4 months gives it a fuller texture and lovely structure.
On the palate it is dry, rich and refreshing, with enjoyable acidity, balance and a finish that lingers beautifully. Bring it out with fried or grilled fish, poultry, grilled vegetables, pasta with white sauces or selections of yellow cheeses. A Vidiano with Mediterranean fruit, herbs and a fresher, Pangaio mountain edge.
