Paralia Foivos Papastratis

Paralia by Foivos Papastratis is the white wine that does not shout, but wins you over the longer it stays in the glass. From a privately owned vineyard site in the Lilantio plain of Evia, with Assyrtiko and Small-Berry Muscat, it is vinified without mechanical means, matures in stainless steel tanks, and remains on its lees for 6 months, gaining depth without losing any of its freshness. On the nose it is discreetly aromatic and expressive, while on the palate it shows character, tension, and that distinctive salinity that makes it incredibly enjoyable alongside shellfish, grilled fish, pasta with white sauces, and vegetables. It is a more personal, more gastronomic side of the wine world of Foivos Papastratis, with ecological awareness in the vineyard, strict grape selection, and a clear emphasis on the essence of the wine.
