Palpo by Kir-Yianni Estate is a Chardonnay from Amyndeon with intensity, depth and the cool precision that makes the Florina region stand out. It comes from the vineyard of the same name in Agios Panteleimonas, where the variety was planted in 1989, in one of the first Chardonnay plantings in the wider area. The result is a white wine with a clear sense of place, richness and excellent balance.
In the glass, it has a bright golden-yellow color and aromas of white flowers, stone fruits and delicate vanilla from the oak. On the palate, it is full and velvety, with a creamy texture that does not feel heavy, because the acidity keeps the wine lively and crisp. The finish has length, fruit and an elegant touch of oak that blends beautifully with the Chardonnay character.
The winemaking of Palpo is clearly focused on structure and complexity. After strict grape sorting, pre-fermentation maceration follows, while fermentation takes place in French oak barrels. Contact with the fine lees for 6 months, along with gentle stirring, gives a creamier texture, volume and greater length on the palate, without covering the fruit.
It is a white wine for those who want something fuller, but not tiring. It stands beautifully next to vegetable or seafood risotto, grilled fish, salmon, white meats and pasta with white sauces.
