Ovilos White by Biblia Chora Estate is one of the great white wines of the Greek vineyard, without needing to shout about it. Semillon and Assyrtiko meet on the slopes of Pangaio, in the warmest and most barren part of the vineyard, giving a wine with richness, intensity, freshness and serious ageing potential. It is the white flagship of the estate and shows it in a firm, elegant and fully gastronomic way.
In the glass it has a bright yellow colour with green highlights and reveals apricot, lemon, citron, honey, vanilla, nuts and subtle hints of smoke. Fermentation and ageing in French oak barrels on the lees give it volume, depth and complex texture, while Assyrtiko keeps the acidity alive and the finish sharp.
On the palate it is dry, rich and impressively balanced, with a creamy sensation, mineral intensity and a long finish that leaves fruit, honey and fine barrel-aged complexity. Give it a large glass and dishes with depth: lobster, large fish, shrimps, seafood risotto, chicken with creamy sauce, pork with lemony notes or mature cheeses. A white wine for tables that call for weight, finesse and length.
