Dreamcatcher Syrah by Chateau Kaniaris is a dry red wine made from 100% Syrah, with deep fruit, rich flavour and a subtle oak feel. It comes from the vineyard of Chateau Kaniaris in Geraneia, an area with a Mediterranean climate, sea breezes and sandy-clay soil with a limestone base.
Vinification follows the classic red winemaking method, with maceration for 8 days at 25°C and fermentation at 18°C, in order to bring out the intensity, colour and structure of Syrah without losing the freshness of the fruit. The subtle presence of oak gives a more integrated texture and gentle maturation notes, without covering the fruity character of the wine.
In the glass, it brings a deep red colour, red fruit, blackberry, plum, dried plum, sweet spices and a subtle note of oak. On the palate, it is rich, full-bodied and balanced, with ripe fruit, soft tannins and a finish that stays pleasantly.
It pairs very well with grilled red meats, beef with mild red sauces, slow-cooked pork, burgers, BBQ, meatballs, pasta with minced meat and mature cheeses. It is a Syrah with a clean, fruity character and enough structure to stand comfortably next to both everyday and more refined meals.
