Nykteri Canava Chryssou – Tselepos is a dry white wine made from 100% Assyrtiko, with an intense and layered character that combines the tradition of classic Santorini Nykteri with a more modern approach. On the nose, aromas of ripe caramelised citrus, honeycomb, roasted nuts, butter, and vanilla stand out, giving it depth and great complexity. On the palate, it is full, mature, and tense, with very good concentration and a persistent finish. Fermentation in oak barrels and ageing on fine lees for 8 months enhance its rich and gastronomic profile. It pairs beautifully with hard cheeses, large oily fish, meats with white sauces, bottarga, and sea urchin.
