Nykteri Gaia Wines

Nychteri by Gaia from Gaia Wines is a dry white wine made from Assyrtiko, with a rich and layered character that combines Santorini tradition with a more modern, barrel-driven approach. It is produced from ripe, often overripe grapes and vinified entirely in barrels, where it remains for about six months. On the nose, notes of vanilla and coconut stand out, blending beautifully with the varietal aromas of the Santorini trilogy, while on the palate the characteristic acidity and minerality of Assyrtiko are joined by more roundness, richness, and volume. It is a wine with intensity and a gastronomic profile, pairing beautifully with white or red meats, chicken, fish, and pasta.
