Mosaic White by Chatzivaritis Estate is a white wine that plays cleverly with contrasts: it has the freshness you want from an everyday white, but also enough character to stand out in the glass. It comes from the Slopes of Paiko and brings together Xinomavro vinified as a white wine, Roditis and Assyrtiko, creating a blend with clean energy, lemony intensity and a refreshing, fruity finish. The winemaking is carried out with separate fermentation of the varieties at low temperatures, helping preserve aromatic purity, while 3 months of contact with the lees give it a fuller texture and better balance. In the glass, it shows golden tones with green highlights, aromas of lemon, white-fleshed fruit and a pleasant sense of freshness. Chatzivaritis Estate, based in Goumenissa, works with respect for the vineyard and with a more natural, handcrafted approach to production. Mosaic White shows this without becoming difficult or overly technical: it is direct, clean, refreshing and very enjoyable. It is lovely on its own, but also pairs beautifully with grilled fish, roasted vegetables, goat cheese and dishes with light sauces.
