Minimus Ni by Chatzivaritis Estate is a natural orange wine from Goumenissa, made for those who want something more alive, more open and a little off the beaten path in their glass. Malagouzia brings the aromatic, fruity character, while Roditis adds energy, freshness and a more earthy feel.
Its winemaking follows a low-intervention approach, with spontaneous fermentation in amphorae and 1 month of skin contact. This contact with the skins gives the wine its intense orange colour, structure and soft tannins, making it especially interesting with food. It then ages for 4 months in old French oak barrels, gaining extra texture and depth without losing its natural energy.
In the glass, it shows orange peel, bergamot, dried apricot, nectarine, honey, dried flowers and a subtle touch of cedar. On the palate, it is structured but not heavy, with lively acidity, gentle tannins and a long finish that leaves a beautiful bittersweet impression.
Chatzivaritis Estate in Goumenissa has given the Minimus series a freer, more creative direction, with wines that do not try to be “perfect” in the classic sense, but instead clearly express the fruit, the place and the natural process. Minimus Ni is ideal next to dishes with intensity: spicy Asian cuisine, spiced chicken, roasted vegetables, mushrooms, aged cheeses or recipes with turmeric, cumin and citrus.
