Idisma Dryos Chardonnay Wine Art Estate

Idisma Drios Chardonnay by Wine Art Estate is a white wine for those who love oak-aged Chardonnay, but still want freshness in the glass. It comes from vineyards in Mikrochori and Kali Vrisi in Drama, two areas where cold winters and cool northern summer winds help the grapes preserve energy and clarity.
Vinification starts with pre-fermentation cold maceration, so the aromas of the variety can be better highlighted. Fermentation begins in stainless steel tanks and then the must, together with the lees, is transferred into 225-litre French oak barrels, where fermentation is completed. Manual stirring of the fine lees follows for about 6 months, giving the wine volume, density and a creamy feel.
In the glass, it has a pale lemon colour and aromas of lemon, peach, apricot and melon, along with more buttery and sweet notes that recall pastry cream, coconut, nuts, smoke and sandalwood. On the palate, it is full, smooth and fairly dense, with acidity keeping everything balanced and preventing it from becoming heavy. The finish is long, with hints of quince, lemon and dried apricot.
It is a wine that asks for food with matching intensity. Try it with oily fish, salmon, seafood with creamy or mustard-based sauces, chicken with white sauce, risotto, quiche, smoked cheeses or even richer Greek dishes such as moussaka.
