Emphasis Chardonnay by Pavlidis Estate is a white wine with a fuller, more gastronomic personality, without becoming heavy or tiring. It comes from a selected vineyard plot on the slopes of Mount Menoikio, at an altitude of 550 meters, where low yields and the cool microclimate of Drama help Chardonnay express clean fruit, intensity and balance.
In winemaking, the approach is carefully crafted: gentle pressing with whole bunches, followed by fermentation and ageing for 6 months in oak barrels, oak tanks and ceramic amphorae. This gives it volume, creamy texture and subtle oak notes, while keeping the freshness of the fruit in the foreground.
In the glass, it has a pale green-yellow color and aromas of pineapple, mango, ripe yellow fruits, honey and gentle oak. On the palate it is round, rich and balanced, with refreshing acidity that keeps it lively and a long finish where fruit meets a soft minerality. It is a Chardonnay that works beautifully with large grilled fish, salmon, grilled white meats, roast chicken and smoked or richer cheeses.
