Etos Assyrtiko – Semillon by Biblia Chora Estate is a white wine that is in no hurry at all. It is produced only in exceptional vintages, from selected low-yield vineyard sites of the estate, and is released after long ageing, when it has already begun to show its more complex, mature and collectible side. Here, Biblia Chora Estate does not simply chase freshness; it plays with time.

In the glass it reveals ripe yellow fruit, peach, quince, bergamot, honey, nuts and a fine aged sensation. Semillon gives volume, richness and depth, while Assyrtiko keeps the wine alive, with acidity and energy that do not allow it to become heavy. Ageing in French oak barrels and long time in the bottle build a white wine with dense texture, balance and great length.

On the palate it is dry, rich and slowly enjoyable, with a creamy sensation, freshness and a long finish that leaves fruit, honey and nutty complexity. Give it a large glass and dishes with depth, such as scallops, lobster, grilled large fish, poultry with mushrooms, truffle risotto, pork with lemon sauce or mature cheeses.
