Etos Agiorgitiko

Etos Agiorgitiko by Biblia Chora Estate is a rare, aged and more collectible reading of the variety. It is produced only in exceptional vintages, from selected low-yield vineyard sites, and is released after many years of ageing in the estate’s underground cellars. It is one of those wines that is in no hurry at all; it has already taken its time before reaching the glass.

In the glass it has a deep ruby colour with garnet highlights and reveals overripe red berries, black cherry, cedar, vanilla, dried violet, spices and earthy ageing hints. Its passage through new French oak barrels and long time in the bottle give it depth, round structure and a more complex, mature character.

On the palate it is dry, rich and velvety, with soft yet present tannins, refreshing acidity and a long, complex finish that leaves fruit, spices and a fine aged sensation. Let it breathe and place it next to slow-cooked lamb, beef with rich sauce, game, mushrooms, aged cheeses or dishes with sweet spices.
