Emphasis Assyrtiko Magnum by Pavlidis Estate is the most impressive version of one of Drama’s most elegant white wines. It is made from 100% Assyrtiko, sourced from a selected vineyard plot on the slopes of Mount Menoikio, at an altitude of 550 meters, where low yields help the variety express intensity, purity and a mineral character.
In winemaking, gentle pressing is carried out with whole bunches, while fermentation takes place in small stainless steel and oak tanks. The wine then remains for 6 months with the fine lees, gaining fuller texture and depth, without losing its sharp, refreshing side.
In the glass, it has a pale green-yellow color and aromas of peach, white-fleshed fruits, citrus fruits and white flowers, with minerality becoming more pronounced as it evolves. On the palate it is full, energetic and clean, with sharp acidity, lovely volume and a long finish that combines fruit and minerality. The 1.5L Magnum bottle gives it an even more premium presence, while helping the wine evolve more slowly and harmoniously, making it ideal for cellaring, gifting or a larger food-focused table.
With food, it has enough intensity to stand next to seafood, fish fillet, steamed fish, risotto and Greek summer dishes. Best served at 8-10°C, so it can keep its freshness and precise mineral line.
