Emphasis Agiorgitiko by Pavlidis Estate is a red wine that shows how beautifully the variety can perform outside Nemea, when handled with precision and patience. It comes from a selected vineyard plot on the slopes of Mount Menoikio, at an altitude of around 400 meters, with low yields and a clear focus on quality. Agiorgitiko has adapted extremely well to the microclimate of Drama, giving a wine with ripe fruit, structure and elegance.
In winemaking, the estate works with great attention to detail: careful selection of the harvest date, precise extraction and ageing for 12 months in French oak barrels and ceramic amphorae. This is followed by at least 12 months in the bottle, allowing the wine to come together, soften and develop a more complex expression.
In the glass, it has a medium to deep ruby color and aromas of ripe cherry, sour cherry, red plum and black pepper. On the palate it is full, with rich fruit, refined tannins and lovely length. Oak works in a supporting role, without covering the variety, while the amphorae help keep the fruit feeling clean and lively. It is ready to enjoy now, but also has strong ageing potential.
At the table, it pairs well with dishes that have intensity and good richness: grilled red meat, lamb, spicy dishes, tomato-based stews and medium-hard cheeses. Best served at 16-18°C.
