Drisbay Hatzimichalis Estate
€17,30
Drysbei by Domaine Hatzimichalis is a Syrah from Atalanti Valley, with dark fruit, peppery character and a clear sense of intensity. It comes from the selected sub-mountainous Drysbei vineyard, on the southeastern foothills of Mount Knimis, in an environment that helps the variety bring out both ripe fruit and a fresher, more structured side.
Vinification follows the classic red winemaking method under controlled temperature and the wine ages for 12 months in 228L French oak barrels, in the estate’s underground cellars. The oak gives depth, cedar and a more integrated texture, without covering the spicy character of Syrah.
In the glass, it brings blackberry, blueberry, black pepper, olive, leather, cedar, jam and sweet spices. On the palate, it is complex and intense, with soft fruit, mild acidity, firm tannins and a long peppery finish.
It pairs very well with grilled meats, fillet of beef with black pepper sauce, pork ribs with BBQ sauce, roast lamb, wild boar, sausages, kebab, salami and charcuterie platters. It is a Syrah with power and character, ideal for food and for anyone who loves reds with spicy intensity.
