The Dots Vidiano Oenops Wines is a Vidiano that shows just how interesting this Cretan variety can become when handled with finesse and without excess. It comes from Heraklion, Crete, a region where the sun, limestone soils and sea breeze give white wines intensity, ripe fruit and pure Mediterranean energy.
In the winemaking process, Oenops Wines does not take the easy route. The wine ferments spontaneously in four different types of vessels: clay amphorae, concrete tanks, large oak barrels and stainless steel tanks. This allows the Vidiano to keep its freshness, while gaining depth, texture and a more complex expression. Ageing for 6 to 9 months and bottling without filtration enhance the authentic, vibrant character of the wine.
In the glass, it has a bright lemon colour with greenish highlights and aromas of citrus fruit, white flowers, ripe white-fleshed fruit and subtle spices. On the palate, it is rich but not heavy, with lively acidity, beautiful texture and a long, elegant finish. It is one of those white wines that can easily stand next to a more refined meal, while also drinking beautifully on a relaxed evening with friends.
It pairs excellently with fish, seafood, shellfish, white meats, dishes with lemony sauces, creamy pasta and Asian cuisine with mildly spicy notes.
